The first cooking class ever conducted by Callum Hann and Themis Chryssidis at Sprout Cooking School was called ‘Quick, Easy & Healthy’, and five years on, it remains their most popular course. Why? Because it’s what so many of us want and, in fact, need; healthy food for ourselves and our families with minimal effort ‐ all day, every day.
In Quick. Easy. Healthy., Callum and Themis present 70+ recipes that use only easy to find ingredients, require minimal preparation and clean‐up time and represent good value for money. Try a warming chicken korma with cumin naan one night and a paprika lamb with romesco sauce the next. A delicious banana ice‐cream with sesame praline can be whipped up in a second and there’s no need to feel the least bit guilty for wanting something sweet.
As a chef and dietitian, Callum and Themis say “we don’t believe in healthproducts, ‘superfoods’, ‘diets’ or strict eating plans … we believe that learning to cook helps build healthy habits and a better understanding of what we are putting into our bodies.”
The key to their food philosophy is providing useful and relevant information along with achievable and enjoyable recipes. This is why all the recipes in Quick. Easy. Healthy. include a nutrition information panel so we can note how much energy, protein, sugar and salt is consumed at every meal. But as they say, good food should be fun and enjoyed by all. So let’s get rid of the ‘D’ word and start enjoying meal times again!
Callum Hann was runner‐up on the 2010 series of MasterChef and won the 2012 MasterChef All‐Stars. He is the author of The Starter Kitchen and I’d Eat That!, both published by Murdoch Books. Themis is a dietitian and runs his own private dietary consulting practice at Sprout Health Studio. Together they run Sprout Cooking School in Adelaide.
